Menu for the Week of 2/2/2015

I’m really not feeling it this week. Uninspired. Thoroughly and completely.

The further we get into any season, the less I feel like planning. Especially in winter.

Dreams of warm(er) and sun, cooking on the grill … if only .. and not soon enough. So forgive this week’s menu for it’s lack of excitement. It’s wishing for summer, too.

Monday

{Kids} Bell & Evans Chicken Tenders, Annie’s Macaroni and Cheese, Green Beans

{Parents} Salads with canned tuna, hard-boiled egg, green beans, feta, olives, cucumbers, tomatoes, Greek dressing

Tuesday

Pizza play date with friends

Wednesday (crazy evening)

Pulled Pork, coleslaw (grocery store), roasted cauliflower

Thursday

Chipotle Chicken Burritos, avocado, lettuce, pinto beans

Friday

Maryland Crab Soup, Grilled Cheese Sandwiches, oranges, sweet peppers

Saturday

Company Pot Roast, Super Delicious Oven Fries, roasted multi-color carrots

Sunday (Super Bowl)

Meatball Stroganoff, noodles, steamed broccoli

Other

Tapioca Pudding (so determined to make this!), chocolate chip cookies, a new snack

Update 2/9: This week’s menu was mostly a bust. Thursday was grilled cheese sandwiches and leftover bean soup. I didn’t have a chance to marinate the chicken for the copycat Chipotle chicken so on Friday, we had quick Chicken Fajitas from Simply Recipes that were delicious. We did have Pot Roast with roasted potatoes and multi-color carrots on Saturday but not the Company Pot Roast. And Sunday. Well, that’s a story of it’s own.
